2021 Pyrenees Nebbiolo
Vineyard
Planted in 2000 on a north facing slope in Victoria’s Pyrenees, this is one of Australia’s most regarded Nebbiolo plantings. Sitting at an altitude of 350m on a red permeable clay and with cool evening temperatures, this vineyard produces fruit with a high aromatic potential and good natural acidity
Winemaking
The fruit was hand-harvested, delivered to Barossa Valley as whole bunches. 50% was destemmed into a small open top fermenter, the balance was direct tipped on top as whole bunches. A combination of light pump-overs and hand-plunging were used to achieve the desired tannin structure, these continued after fermentation was complete for added complexity. The wine spent a total of 6 weeks on skins before it was basket-pressed, settled overnight, and racked to seasoned French oak. The wine remained on lees until October 2021 when it was racked and returned. Bottled in June 2022 after 14 months maturation.
