2021 Eden Valley Riesling
Vineyard
Planted in the 1971 on a grey, sandy loam with a south easterly aspect and an altitude of 430m this vineyard has survived and flourished with minimal irrigation and inputs over its lifetime.
Winemaking
The fruit was hand harvested in the cool of the morning and then destemmed to the press. Following this the juice was cold settled for 48 hours and the clean juice racked off lees before inoculation with selected yeast strain. The cool fermentation lasted 2 weeks and the wine then remained in stainless steel on Gross lees for 3 months. Bottled in June 2021.
