2021 Barossa Valley Mataro
Vineyard
Nestled at the cool Southern end of the Barossa Valley, near the boundary of the Adelaide Hills, is Aldo’s Vineyard. This single vineyard is planted on a deep silty grey loam overlaying a yellow clay and consistently produces Mataro with complex spice and aromatic intensity.
Winemaking
The Mataro was hand-harvested on the 24th March 2021 and fermented with 25% whole bunches to retain vibrancy and brightness in the wine. After 8 days on skins the wine was pressed off to complete fermentation. Once fermentation was complete the wine was left to settle for several days before racking into seasoned French oak hogsheads for natural malolactic fermentation. After 10 months in oak the wine was blended and bottled without fining or filtration in January 2022.
